  1. Blue Garlic?

    September 4, 2010, 2:11 am
I always liked to buy Garlic on vinegar. Easy to use in my cooking. However, i decided to make a jar of my own. I bought a big jar that could be closed air-tight, a lot of beautiful big garlic and i peeled the garlic and put it in the jar with the white vinegar. Then, to my surprise, after a few days, all the garlic cloves had turned a bright blue color.. how did that happen? I trew them away, i dont think they were still edible. Any explanations? Oh, and ifa nyone has an idea how i can do it without getting them to turn blue, i;d be ever so grateful

I want to make some homemade caesar salad dressing to use on my fresh from the garden romaine lettuce, but I'm only going to need two servings of salad at a time as I'm only making this for my husband and me. If I go ahead and make a full recipe of dressing, how long will it keep in the refrigerator? I've chosen a recipe from a cookbook, but if you have a favorite - please share!
